Mother’s Day 2021 Cook With Kids Brunch Recipes

On the 14th March 2021, Mother’s Day provides the perfect opportunity to pamper that very special women in your, and your little one's lives.
Here's an easy and fun egg benedict recipe to make together with your children. This simple method is ideal for all the little kitchen helpers to show how much they care about Mummy.

Make Ahead Eggs Benedict Bake Planned to Perfection

This is a great idea to prep the night before so the kids can help out with the final touches.
Ready in 1 hour and 5 minutes, which is split as 15 mins preparation time and a nice long break for cooking at 50 minutes. Plenty of time to decorate the table with a posy of fresh flowers and a mug of hot tea.

To make ahead refrigerate for at least 5 hours, or overnight.
Don't be afraid of making your own Hollandaise sauce! All you need is lemon juice, some egg yolks, double cream and a small amount of Dijon mustard. Of course, you can nab a jar from the supermarket shelf, but why not give this a whirl? Here's how in just over an hour:

Ingredients:

Coat a 9×13 pan or baking dish with cooking spray, or smeared with butter.
3/4lb of your favourite bacon, maybe pop into your local butchers
6 English muffins, halve them and cut into 1" chunks
    8 large eggs
    500ml full fat milk
    Spring onions (to garnish)
(You can add your own seasoning, perhaps a 1/4 teaspoon paprika to go with the salt and pepper. Don't be scared of substituting here)

Mix your bacon and the english muffin pieces and place in the baking dish, ensure to spread everything around evenly.

In a large bowl whisk together the 8 eggs, whole milk and your seasoning; pour all over the top of the English muffins and press down gently with the back of a wooden spoon (or your hands) to coat thoughout.

Easy Hollandaise Sauce

    4 large egg yolks
    4oz double cream
    2 Tablespoons lemon juice
    1 Teaspoon Dijon mustard
115g unsalted butter, melted in the microwave for 20 seconds. Chop this into cubes for even meting.

Remove from the refrigerator 30 minutes before baking, sprinkle some paprika over the top if you fancy. Preheat oven to 375 degrees Farenheight, gas mark 5.

Cover with foil (or lid) and bake for around 35 minutes. Uncover and inspect; bake 15 minutes longer or until a knife inserted near the center comes out without sticky bits and clean.

Just before you think it's ready to serve, it's time to make your hollandaise.
Heat the butter in the microwave for about 20 seconds, or until melted and hot, but not boiling.

In a blender or in a bowl and whisk, add the egg yolks, cream, lemon juice, mustard, and cayenne to taste; cover and blend for about 10 seconds (or whisk until homogenised).

Now carefully and slowly drizzle in the melted butter to the mix, until fully incorporated and naturally thickens.

Taste and adjust flavour to your liking with extra salt and pepper if required.
Pour the sauce over the english muffin baked mix and serve immediately!
