The giant handmade chocolate Father Christmas measures a huge 50cm in height and weigh a whopping 1.8kg (approx) and is only available for Click and Collect from either of our Chocolate Cafes: Our flagshop store is located at the Wendover chocolaterie in Buckinghamshire, or over at the Thame chocolaterie in Oxfordshire.

Handmade Milk Chocolate Santas with White and Dark Choccy Details

Bespoke Orders Taken - Most Chocolate Santas are made in milk chocolate (the detail on the mould is done in dark and white so it stands out). We can make to order in dark or white chocolate. They are hollow, although the chocolate is very thick as Father Christmas gets treated to 2 layers - unlike factory-made santa chocolates.

We’ve been making artisan handmade Father Christmas chocolate figurines since before we even opened our first chocolaterie, we’d sell them at craft fairs and markets! So around 1999 ish. We use a mould and it took lots of attempts to perfect – it is still a challenge for some of our younger chocolatiers.

Stage 1 When you make them you start by ‘painting’ the mould with the chocolate to get the features, it’s all in the eyes we find it best to have him slightly looking to the side to give him that cheeky look.

Stage 2 We let them set at room temperature (albeit air conditioned so a cool room). Our chocolate is perfectly tempered by the chefs which means it sets well and is extra shiny, rather than ‘dull’ looking chocolate you buy in a supermarket.

Stage 3 When the detail chocolate is set in the moulds then we take a large ladle and fill each half of the mould with milk chocolate (unless you have ordered a bespoke Santa), leave this to set and then give Father Christmas a second layer and seal him up.

Stage 4 The chocolate Santa figurines stored in a cool room (which needs air con in the summer) of course for Christmas it’s easy to keep temperatures down to perfect.

Stage 5 - Final gift wrapping. Our fully trained staff carefully wrap our chocolate Santa Claus individually by hand. He's then finished off with a cute ribbon bow.

Handmade Chocolate Father Christmas Storage and COVID

Availability - from November each year. In 2020 we started by making 40 small size, 40 medium size and 20 large. Once they sell out we will make more, but do not want to bulk hold too much stock in case we aren’t able to open shops due to COVID-19.

Best before date is February 2021

We generally make chocolate right up Christmas eve, we find at Christmas we can’t make it fast enough! We have big windows in both chocolateries overlooking into the chocolate making area and people often buy things as we make them before they even get to the shelves. Best before date is February 2021 but do check when purchasing for the consumption date.

Family Business and Small Local Dairy Cream and Milk

Our hollow figurines are stored in a cool room, in comparison to our individual handmade chocolates with ganache centres in gift boxes. These are a little different and these are very much temperature controlled for optimal storage.

In our artisan chocolate gift boxes where the handmade chocolates may have a ganache centre. Here we add milk/cream we use a local dairy – Laceys Family Farm in High Wycombe - another family business with a herd of pedigree Guernsey cows.

The story of how the business began in 2001 from the family kitchen in Aylesbury. Nigel had been a pastry chef for 20 years and was working in the kitchens of New College Oxford when a colleague asked if he would make a batch of chocolates for him to take home to his family. He enjoyed making them so much that he made a second batch for his own family too.  Years of experience as a Chef and Patissier provided the inspiration and depth of knowledge needed for Nigel to become a Master Chocolatier of distinction. He began creating his exquisite range of award-winning handmade chocolates in the family kitchen in Aylesbury, then expanding to a small catering unit at the back of his house.

Demand for Nigel’s handmade chocolates quickly outgrew his home kitchen. Although his two boys will always fondly remember the day a tonne of chocolate was delivered to their home.

‘The Old Bank’ on the High Street in Wendover seemed like the idea premise to bring Nigel’s dream of opening his own chocolaterie to life. Now decorated with cornflower blue walls and antique fixtures and fittings, Rumsey’s is full of charm.  Inspired by the film 'Chocolat', their aim was to provide a wonderful sumptuous environment in which to sit drinking velvety hot chocolate and choose from the wonderful selection of truffles, ganaches, pralines, creams and petit fours; each with its own distinctive flavour.

Headlines regularly talk about the doom and gloom of the British High Street. Whilst Rumsey’s have experienced difficult periods over the last 15 years, the strength of their brand and an army of loyal customers have kept the business thriving. 

As we enter November our thoughts turn to Christmas and Rumsey's chocolate 'elves' start to fill the shelves with all manner of delights. Christmas chocolates tend to sell fast at the chocolateries and many customers say Christmas is not complete without their annual selection of Rumsey's treats.
