REPORTING TO: Head of Production

PLACE OF WORK: Rumsey’s Chocolaterie Thame and Rumsey’s Chocolaterie Wendover.

HOURS: 32 to 40 hrs per week, Sunday availability essential.

SALARY: Up to £11.44 per hour.

ABOUT RUMSEY’S

Rumsey’s Handmade Chocolates is an award-winning family run business set in the heart of the Chilterns. Started by Nigel Rumsey in 2001 and now owned and run by daughter-in-law Kate, Rumsey’s operates two chocolateries in the market towns of Wendover and Thame. The team consists of eight Production Chefs working across Chocolate and Patisserie, two Wrapping and Fulfilment members of staff and around 35 Front of House team members. Our team create a range of fresh artisan chocolates for online, retail and wholesale. Chocolate is at the centre of everything we do, and members of the public enjoy seeing the Production Chefs at work in our theatre kitchens. As well as making chocolates our Production Chefs make a range of ice-cream and patisserie products, and lead chocolate courses and workshops for members of the public.

PURPOSE OF JOB

This role would suit someone in the early stages of their career, or someone more experienced who is keen to develop the specific skills of becoming a Chocolatier. Some previous experience in a professional kitchen environment is essential, but full training will be given. We are looking for an energetic and enthusiastic person who is willing to muck-in, has excellent attention to detail and keen to learn. The role is split between Wendover and Thame, predominantly working daytime shifts. Sunday working and own transport between the two sites is a must.  

The role will support the chocolate team in producing our full range of Rumsey’s artisan chocolates for our retail, wholesale and online outlets. The job involves learning to produce our extensive range of up to 40 varieties of filled chocolates, as well as moulds, décor and dipped chocolate products. For the right candidate there will also be the opportunity to work creatively in developing new chocolate flavours for our popular seasonal boxes. The Production Chef will also be trained in producing high quality patisserie products to serve in our Chocolateries, including cakes, biscuits, marshmallows and macaroons. The candidate must be willing to assist with all elements of running the kitchen, including washing up, polishing moulds, topping up chocolates in the shop, unpacking deliveries etc. We are looking for someone with excellent communication skills, and who is confident in assisting chocolate-making workshops and courses for children and adults. This role requires an organised team player who runs a tidy kitchen and who is happy to support the Front of House and Fulfilment teams during busy periods.

REQUIREMENTS

Essential

  • Previous experience in a professional kitchen or production unit.
  • Own transport to travel between Thame and Wendover chocolateries.
  • Ability to work regular Sunday shifts (and very occasional evenings).
  • High standard of personal hygiene and presentation. Tidy and mindful of always keeping a clean and clear working environment, achieving high food safety standards.
  • Positive attitude and able to be proactive in the workplace.
  • The ability to communicate well.
  • Great teamwork with a friendly and respectful attitude towards colleagues.
  • Excellent attention to detail and accuracy, with good time management.
  • The ability to work with energy and at speed.
  • A love of artisan food.
  • Keen learn about all aspects of Rumsey’s chocolate production.
  • To have a good awareness of allergens.

Desirable

  • A creative chef, willing to get involved in product development.
  • Level 2 Food and Hygiene Safety Certificate
  • Understanding of HACCP and SALSA processes
